Kitchen Adventures: Mushrooms & Pasta

You realized I barely blog right now. That’s because I’m preparing myself for the admission exams at university. But once in a while everyone needs a little break and something relaxing to do. Some meditate, some jog, some watch TV, some just sleep, and some even cook. I love cooking and I find it very relaxing. I often cook with friends and they always ask me where do I get my recipes from and how do I do it. So i decided to write it down here in my blog. Under the new Category Kitchen Adventures you will find all my recipes I published so far. Today we are going to start with some nice mushrooms. Now mostly I don’t cook with measurements, I just follow my feeling. But to help you out, I will write down exactly what I used. Now if it comes down to Pasta I eat for roughly 2, so you could say this recipe is for 3 to 4 persons. Oh and I tried to keep the instructions simple …

Now we want to make to different things, a simple champignon sauce and a nice chanterelle-topping.

For 2 Jascha’s we need:

  • 200g fresh chanterelles
  • 500g fresh champignons
  • 1 fresh chili
  • 1 basil plant
  • 1 onion
  • 1 garlic clove
  • 500g pasta of your liking
  • 200ml whipped cream
  • 1 table spoon crème fraîche
  • pepper & salt ( and if you like it Herbes de Provence)
  • Olive Oil

Time to cook:

  • Clean the champignons and chanterelles
  • Cut the champignons and chanterelles into suiteable pieces
  • Cut the chili into rings
  • Cut the garlic, onion and hand full of basil leaves into tiny pieces
  • Cook the pasta with salt only and get the timing right so it is finished with the sauce!
  • Fry garlic and onion in olive oil until it is vitreous
  • Use half of the garlic and onion when you fry the champignons
  • Fry them until they lose their water and shrink
  • Use the rest of the garlic and onions to fry the chanterelles
  • Add the basil and chili to the chanterelles
  • Add the whipped cream and the créme fraîche slowly to the champignons until you have a nice creamy consistency of the sauce
  • Add the salt, pepper and Herbes de Provence as you like it best

Now you can serve the food and it might look somewhat like the picture below.

Vermutlich habt ihr bereits gemerkt, dass ich momentan sehr wenig blogge. Das liegt daran, dass ich mich gerade auf die Aufnahmeprüfungen einer Universität vorbereite. Aber jeder braucht mal eine kleine Pause, um sich zu entspannen. Manche finden Entspannung in Meditation, Jogging, Fernsehen, einfach nur schlafen oder eben im Kochen. Ich liebe es zu kochen und ich finde es sehr entspannend. Oft koche ich mit Freunden zusammen und immer wieder werde ich gefragt, woher ich meine Rezepte habe und wie ich sie zubereite. Darum habe ich mich entschieden, meine Rezepte hier im Blog festzuhalten. In der neuen Kategorie Kitchen Adventures (dt.:Küchenabenteuer) werdet ihr alle meine veröffentlichten Rezepte finden. Heute fangen wir mit Pilzen an. Dazu solltet ihr noch wissen, ich koche nicht nach Maß, sondern nach Gefühl. Aber für euch werde ich exakt aufschreiben, was ich verwende. Wenn ich Pasta zubereite, dann esse ich fast so viel wie zwei Leute, man könnte also sagen, dieses Rezept ist für 3-4 Personen gedacht. Außerdem habe ich versucht die Anweisung einfach zu halten …

Wir wollen zwei Sachen vorbereiten, eine einfache Champignon-Soße und eine leckere Pfifferling-Garnierung.

Für 2 Jaschas brauchen wir:

  • 200 g frische Pfifferlinge
  • 500 g frische Champignons
  • 1 frische Chili-Schote
  • 1 Basilikumpflanze
  • 1 Zwiebel
  • 1 Knoblauchzehe
  • 500 g Pasta eurer Wahl
  • 200 ml Schlagsahne
  • 1 Esslöffel Crème Fraîche
  • Pfeffer & Salz ( und falls ihr es mögt Herbes de Provence)
  • Olivenöl

Zeit zu kochen:

  • Putzt die Champignons und Pfifferlinge
  • Schneidet die Champignons und Pfifferlinge in eine passende Größe
  • Schneidet die Chili-Schote in dünne Ringe
  • Schneidet den Knoblauch, die Zwiebel und eine Hand voll Basilikumblätter sehr fein
  • Kocht die Nudeln nur mit Salz und zwar so, dass sie mit der Soße fertig werden!
  • Bratet den Knoblauch und die Zwiebeln glasig an
  • Benutzt die erste Hälfte des Knoblauchs und der Zwiebel, um die Champignons anzubraten
  • Bratet sie an, bis sie Wasser verlieren und kleiner werden
  • Benutzt den Rest des Knoblauchs und der Zwiebel, um die Pfifferlinge anzubraten
  • Fügt den Basilikum und die Chili zu den Pfifferlingen hinzu
  • Fügt die Schlagsahne sowie die Crème Fraîche langsam zu den Champignons hinzu, solange bis ihr eine wunderbare crèmige Soße habt
  • Würzt mit Pfeffer, Salz und gegebenfalls Herbes de Provence, bis es passt

Jetzt könnt ihr euer Essen servieren und es sollte in etwa wie auf dem Bild da unten aussehen.

Supongo que ya se han dado cuenta que no estoy blogeando mucho. Es porque estoy preparandome para los examenes de admisión de una universidad. Pero de vez en cuando cada uno necesita algo relajante. Algunos meditan, algunos hacen jogging, algunos miran televisón, algunos simplemente se duermen y otros cocinan. Yo amo cocinar y me relaja bastante. Muchas veces cocino con amigos y muchas veces me preguntan de dondé es esa receta y cómo se prepara. Así me decidí de poner las recetas a mi blog. En la nueva categoría Kitchen Adventures (es.: aventuras en la cocina) encontrarán todos mi recetas ya publicadas. Hoy empezaremos con hongos.  Otra cosa que deben que saber es que yo cocino seguindo mis setimientos . Pero para ustedes escribiré exactamente lo que usaba para cocinar el plato. Si yo como pasta, deben que saber que como casi por dos personas, así que se podría decir, que esa receta es para 3-4 personas. Además intentaré de escribirlo sencillamente…

Haremos dos cosas,una salsa simple de champiñones y una guarnición saboroso de cantarelas.

Por 2 Jaschas necesitamos:

  • 200g cantarelas frescos
  • 500g champignones frescos
  • 1 chili fresco
  • 1 planta de albahaca
  • 1 cebolla
  • 1 diente de ajo
  • 500g pasta de su querer
  • 200ml nata batida
  • 1 spoon crème fraîche
  • Pimienta & sal ( y si quieres Herbes de Provence)
  • Aceite de oliva

Hora de cocinar:

  • Limpia los champiñones y las cantarelas
  • Corta los champiñons y las cantarelas en un tamaño deseado
  • Corta el chili en anillos
  • Corta el ajo, la cebolla y el albajaca en pedazos pequeñitos
  • Cocina la pasta asi que está lista con la salsa y solamente usa sal!
  • Frita el ajo y la cebolla en aceite de liva hasta que sean vitriosos
  • Usa la midad del ajo y de la cebolla para fritar los champiñones
  • Fritales hasta que se pierdan su agua y se enpequeñecen
  • Usa el resto del ajo y de la cebolla para fritar las cantarelas
  • Añade el albahaca y el chili a las cantarelas
  • Añade la nata batida y el crème fraîche lentamente a los champiñones hasta que sea la salsa bien cremosa
  • Añade sal, pimienta y Herbes de Provence como le gusta más

Ahora pueden servir la comida y se debería ver algo como la imagen que está abajo.
